RISO TERRA E MARE

riso_terra_mare Ingredienti:

Dosi per 4:

320 g riso
300 g pomodori maturi
300 g calamaretti
200 g gamberetti
300 g champignons saltati in padella
2 coste sedano
40 g olio
succo di 1 limone
50 g rucola tritata
sale
Pepe in grani
cipolla

Lessare i calamaretti in poca acqua aromatizzata con sedano, cipolla e Pepe. A cottura quasi ultimata unire i gamberi. Tagliare i calamaretti a listarelle e rimetterli nel liquido di cottura, unire i pomodori a pezzi, i funghi, l'olio e il limone. Far marinare per 2--3 ore. Cuocere il riso al vapore e condirlo con il sugo e la rucola.
