RISO CON SPINACI E PANCETTA

Rosolare il riso con lo Speck o pancetta, un po' di sedano, aglio e cipolla....

Aggiungere poco vino bianco, gli spinaci del giorno prima tritati fini, portare a fine cottura con brodo leggero.

All'ultimo momento aggiungere il formaggio e lasciar mantecare qualche minuto, oppure, per stomaci più robusti, far fondere nel pastone un po' di Fontina o Asiago o Montasio.
