MINESTRA DI RISO E PISELLI E LATTUGHE

minestra_riso_piselli_lattughe Ingredienti:

Dosi per 4:

200 g riso
200 g pisellini sgusciati
500 g lattuga
3 l brodo
50 g burro
1 piccolo cucchiaio prezzemolo tritato
parmigiano grattugiato
sale

Soffriggere il burro, versare il brodo, aggiungere i piselli e il prezzemolo e cuocere fino a completa cottura. Tagliare finemente le foglie di lattuga, cuocerle al dente in acqua leggermente salata e sgocciolarle. Far bollire il brodo e piselli, unire il riso e la lattuga, portare a cottura e servire con il parmigiano.
