SFORMATO DI TAGLIOLINI

Ingredienti:

Dosi per 4:

400 g Tagliolini
150 g burro
100 g parmigiano grattugiato
4 uova
3/4 l latte
farina
Noce moscata
sale
Pepe

Preparare una Besciamella con la farina, il latte, 50 g di burro, il sale, il Pepe, un po' di Noce moscata e, fuori del fuoco, unire 80 g di burro, il parmigiano, i tuorli e le chiare montate a neve.

Cuocere i Tagliolini al dente in abbondante acqua salata, condirli con la salsa preparata, metterli in una teglia imburrata e infornare per 20 minuti.
