PASTA ALLA PARMIGIANA

300 g pasta mezzi rigatoni o simili
4 melanzane
pomodoro
parmigiano
olio
aglio
250 g Mozzarella
sale

Sbucciare le melanzane, tagliarle a rondelle, salarle e lasciarle per circa un'ora a fare acqua. friggerle poi in olio bollente. Preparare il sugo con olio, aglio, pomodoro e Basilico.

Cuocere la pasta al dente, condirla, disporne uno strato in una pirofila unta d'olio, ricoprire con uno strato di melanzane, con fette di scamorza e cospargere di parmigiano; ripetere fino ad esaurire gli ingredienti. Terminare con melanzane, sugo e formaggio. Far gratinare al forno.
