PAPPARDELLE ALLA CREMA

Ingredienti:

Dosi per 4:

400 g Pappardelle
100 g parmigiano grattugiato
80 g burro
2 uova
Noce moscata
sale
Pepe

Lavorare i tuorli con un frullino, incorporarvi 70 g. di parmigiano, 25 g. di burro ammorbidito, un po' di Noce moscata, il sale, il Pepe e gli albumi montati a neve ben ferma.

Cuocere le Pappardelle al dente in abbondante acqua salata, condirle con la crema preparata, versarle in una pirofila imburrata, cospargere con il restante burro e parmigiano e infornare per circa 10 minuti.
