POLPETTONE MORBIDO

Ingredienti:

Dosi per 6:

1 kg spinaci
1 kg patate
120 g ricotta
100 g burro
5 uova
parmigiano grattugiato
maggiorana
Noce moscata
50 g farina
sale
cipolla

Lessare le patate e passarle. Unire metà del burro, la farina, 2 uova, la noce moscata, salare e lavorare per avere un impasto liscio. Stendere l'impasto, spesso circa 1 cm, su un panno umido, porvi gli spinaci lessati e saltati in padella, la ricotta, il parmigiano, la maggiorana e 3 uova sode; arrotolare, legare e bollire in acqua per 10'. Servire a fette con burro e parmigiano.
