hg mandorle dolci
5--7 mandorle amare
2.5 hg zucchero pilè
6 uova

Pestare bene nel mortaio le mandorle e lo zucchero. Aggiungere i 6 rossi d'uovo e lavorare bene tutto come una polentina per mezz'ora. Montare gli albumi a neve, unirli alla crema e versare in una tortiera ben unta e si manda al forno.
