Dosi per 4:

100 g farina
250 g polpa di cocco
250 g zucchero di canna
50 g burro
4 uova
1 bustina lievito

Mescolare la polpa di cocco, lo zucchero, il burro fuso, il lievito, la farina e i tuorli fino ad ottenere un composto omogeneo. Incorporarvi delicatamente gli albumi montati a neve.

Trasferire il tutto In una teglia imburrata e infarinata. Cuocere in forno caldo a 190oC per circa 20 minuti.
