Dosi per 6:

2 kg castagne
300 g zucchero
200 g cacao amaro
200 g panna montata

Bollire le castagne in abbondante acqua salata, poi tagliarle a metà, svuotarle e setacciare la polpa.

Allargarla su un panno per farla asciugare bene e far riposare per 3 ore.

Quindi amalgamare al passato di castagne il cacao, un pizzico di sale e lo zucchero.

Formare con il composto un piccolo monte su un piatto di portata e coprirlo con la panna.
