Dosi per 12:

200 g zucchero a velo
100 g cacao amaro
100 g cacao dolce
8 uova
300 g Rhum bianco

Rassodate le uova, sgusciatele e dividetele a metà. Estraete i tuorli. Lavorate il burro in una casseruola con un cucchiaio di legno: quando apparirà spumoso unite il cacao amaro e quello dolce, lo zucchero, il liquore versato un cucchiaio per volta e i tuorli passati al setaccio. Mescolate il composto e versatelo in uno stampo da budino ricoperto di garza, passate il dolce in freezer per 2 ore. Poi, eliminate la garza e servite.
