Dosi per 6:

200 g farina
200 g zucchero
1 bicchiere latte
6 uova
4 albumi
150 g burro

Mettere in una Terrina la farina, lo zucchero, poco sale, le uova intere, la buccia grattugiata di un limone e lavorare energicamente l'impasto. Montare gli albumi e incorporarli all'impasto, aggiungere il burro fuso.

Versare il composto in una Terrina e mettere al forno preriscaldato a calore piuttosto vivo per 20 minuti. Controllare la cottura con uno stecchino, deve uscire asciutto e pulito.
