DOLCE ALLE CAROTE

Ingredienti:

Dosi per 4:

3 uova
2 cucchiai farina
100 g zucchero
300 g mandorle o noci, tritate
300 g carote grattugiate
1 bicchierino Rhum
sale
scorza di limone grattugiata
1 busta lievito

Frullate le uova, aggiungete la farina, il sale, lo zucchero, la scorza di limone ed il lievito, amalgamate bene e incorporate il Rhum. Quando avrete ottenuto un composto omogeneo, versate il tutto in una Terrina e aggiungete le mandorle e le carote. Mescolate e versate in una tortiera imburrata e infarinata. Mettete in forno a 200oC per 30--35 minuti.
