crostata_riso Ingredienti:

Dosi per 6:

per la pasta:
200 g farina
100 g burro
100 g zucchero
3 tuorli
buccia di limone grattugiata
per il ripieno:
100 g riso
1/2 l latte
60 g burro
70 g zucchero
buccia di limone
3 albumi

Cuocere il riso nel latte con la buccia di limone e poco sale per circa 35'. Lavorare 60 gr di burro con 70 gr di zucchero, unire il composto e gli albumi a neve al riso raffreddato. Preparare una pasta frolla con gli ingredienti indicati e disporla in uno stampo imburrato e infarinato, versare la crema di riso e cuocere in forno a 180' C per circa 25'.
