2 albumi freschi
200 g zucchero
200 gr mandorle pelate

Tostare le mandorle sulla placca del forno a 140' per 15 minuti. Farle raffreddare e tagliarle a filetti. Montare a neve gli albumi con lo zucchero, unire le mandorle e mescolare lentamente dal basso verso l'alto. Disporre l'impasto a cucchiaiate sulla placca del forno. Cuocere a 100' finché sugli spumini si forma una fessura.
