MARMELLATA DI CASTAGNE

Ingredienti:

Kg castagne con la buccia
1 Kg zucchero
vaniglina

Sbucciare le castagne, lessarle, togliere la seconda buccia e passarle con il passaverdure. Far caramellare lo zucchero con un po' d'acqua possibilmente in un recipiente di rame, unire allo zucchero le castagne passate mescolando bene, aggiungere un po' di vaniglina e versare nei vasetti, chiudendo a caldo.
