SORBETTO DI MELONE

Ingredienti:
Dosi per 4:
300 g polpa di melone
100 g zucchero
1/2 albume di uovo

Bollire per 2--3' 1 dl di acqua con lo zucchero. Frullare la polpa di melone e unirla allo sciroppo di zucchero amalgamandola bene. Mettere il composto nel freezer per 3 ore rigirandolo ogni 20--30'. Unire il 1/2 albume di uovo montato a neve e rimettere in freezer fin quando tutto sarà ben gelato, girando sempre ogni 30'. Servire in coppette ben fredde.
