PALLINE DI RICOTTA

Ingredienti:

600

g ricotta
150 g zucchero
2 tuorli
1 cucchiaino Cannella
farina
Per la pastella:
2 uova
3 cucchiai farina
3 cucchiai latte
olio
sale

Sbattere le uova, unire la farina e una presa di sale, mescolare, poi incorporare il latte. Ottenuta una pastella densa far riposare 1/2 ora. Lavorare a lungo con le mani la ricotta, la Cannella, 75 g di zucchero e i tuorli. Formare delle palline, infarinarle, passarle nella pastella, friggerle in olio bollente e spolverizzarle di zucchero.
