FRITTELLE DI FIORI DI SAMBUCO

Ingredienti:

buona dose fiori di sambuco ad occhio due litri, ancora da pulire
1 bicchiere latte
1 hg farina
1 hg zucchero
3 uova
1/2 bustina lievito vanigliato
1 pizzico sale
molto olio per friggere

Togliere i gambi più grossi alle infiorescenze del sambuco. Montare gli albumi a neve. A parte, mescolare farina, zucchero, i tuorli ed il latte; quando avrete sciolto tutti i grumi, incorporate i bianchi, poi il lievito ed infine i fiori, mescolando con molta delicatezza. Fatene frittelline e friggetele bene; scolatele e mangiatele ancora calde!
