SPUMA DI MASCARPONE

Ingredienti:

Dosi per 4:

250 g mascarpone
1 tazza panna
1 kg albicocche
2 cucchiai liquore all'abicocca
1 cucchiaio zucchero in polvere
1 bustina zucchero vanigliato
1 cucchiaio pistacchi pelati e tritati

Passare al setaccio le albicocche tenendone 4 metà da parte. Montare leggermente la panna e unirvi il mascarpone, lo zucchero in polvere e vanigliato, il passato di albicocche e il liquore. Amalgamare bene, distribuire in coppette, spolverizzare di pistacchi, decorare con le mezze albicocche e mettere in frigo.
