BUDINO DI SEMOLINO 

1/2 litro di latte. Si fa bollire, poi si aggiungono a pioggia 4 cucchiai di semolino, 4 di zucchero, un po' di scorza di limone, 2 rossi d'uovo e due bianchi montati a neve, uva passa e cedro tagliato a pezzetti. Si versa nello stampo imburrato ed infarinato e si cuoce a bagnomaria, fuoco sopra e sotto.
