BUDINO DI AMARETTI

Ingredienti:

Per 4 persone:

150 g Amaretti
1/2 l latte
150 g zucchero di cui 50 per il caramello
1 limone
2 uova

Sbriciolate gli Amaretti, grattugiate la scorza del limone, uniteli al latte e bollite tutto 10 minuti; aggiungete 100 g di zucchero e fate raffreddare. Al budino tiepido unite i due tuorli e, sempre mescolando, incorporate delicatamente gli albumi montati a neve. Versate in uno stampo dopo aver fatto caramellare i restanti 50 g di zucchero e cuocete a bagnomaria 1 ora circa. Quando il budino sarà freddo capovolgetelo e mettetelo in frigo.
