INSALATA DI LEGUMI

Ingredienti:

Dosi per 4:

1/2 kg legumi secchi (ceci, Fave, fagioli, ecc...)
1/2 kg pomodori
400 g fagiolini
1/2 kg finocchi
2 cipolle
prezzemolo
erba cipollina
6 cucchiai olio
2 cucchiai aceto
sale
Pepe

Dopo aver lasciato a bagno i legumi per 12 ore, cuocerli in poca acqua salata e lessare i fagiolini. Far raffreddare le verdure e scolarle bene. Affettare gli ortaggi, infine unire i legumi e i fagiolini.

Sbattere energicamente l'olio con l'aceto, il prezzemolo e l'erba cipollina tritati finemente. Condire con questa salsa l'insalata e servire.
