Lessare 3 patate in acqua salata, sbucciarle ancora calde e affettarle. Porle in un'insalatiera con 2 arance sbucciate a vivo e affettate, 1 cipolla tritata e 1 cetriolo affettato sottilmente.

Salare, pepare e condire con 6 cucchiai d'olio d'oliva e la buccia grattugiata di un'arancia.

Servire quando le patate sono ancora tiepide.
