spuma_tacchino Ingredienti:

Dosi per 4:

400 g fesa di tacchino
50 g spinaci lessati
100 g prosciutto cotto in una Sola fetta
2 albumi
1/2 dado
3 foglie Salvia
1 scalogno

Soffriggere in poco olio e burro la Salvia e lo scalogno tritati. Farvi rosolare il tacchino a fettine, unire il dado, sale e Pepe. Togliere dal fuoco e tritare la carne. Unire gli spinaci, il prosciutto a pezzetti, il fondo di cottura e passare il tutto al setaccio. Unire gli albumi a neve, versare in uno stampo foderato di alluminio e imburrato e cuocere a bagnomaria per 45' in forno caldo a 180' C. Servire a fette.
