LINGUA SALNITRATA

Ingredienti:

g Cannella
12 Chiodi di Garofano
1 pugno foglie di Rosmarino
1 pugno bacche di Ginepro
12 g salnitro
1 pugno sale
2 spicchi aglio
1 lingua

Pestare tutto (tranne la lingua) nel mortaio, poi strofinare con il miscuglio la lingua (non lavata) e metterla in un recipiente di creta, coprendola con un piatto con un peso sopra. Lasciarla in salamoia per 10 giorni, rivoltandola ogni giorno; metterla a bollire in acqua fredda fino a cottura.
