INSALATA DI RISO AL POMPELMO

Ingredienti:

Dosi per 4:

300 g riso
1 pompelmo
1 limone
prezzemolo
olio d'oliva
sale
Pepe

Lessare il riso al dente in abbondante acqua salata, passarlo sotto l'acqua corrente e metterlo in una insalatiera. Sbucciare il pompelmo, tagliarlo a cubetti, unirlo al riso, spolverizzare con il prezzemolo tritato, pepare, condire con una salsetta preparata sbattendo insieme olio, sale e succo di limone e servire.
