INSALATA CAPRICCIOSA

insalata_capricciosa Ingredienti:

Dosi per 4:

4 cespi indivia belga o radicchio trevisano
2 arance
1 cipolla rossa
200 g prosciutto cotto in una Sola fetta
1 cucchiaio pistacchi
1/2 cucchiaino Senape
1 limone
olio
sale
Pepe
Facoltativi:
2 uova sode
olive

Mescolare insalata a listarelle, arance a spicchi sbucciate al vivo, prosciutto a dadini e cipolla a fette. Scottare i pistacchi in acqua bollente, pelarli e tritarli grossolanamente. Stemperare 6 cucchiai di succo di arancia, 1 cucchiaio di succo di limone e 1/2 cucchiaino di Senape. Versare sull'insalata, cospargere con i pistacchi e servire
