Dosi per 4:

600 g. melanzane
1 bicchiere olio d'oliva
sale fino
1 cucchiaio zucchero
1 bicchiere aceto bianco

Lavate e asciugate le melanzane, tagliatele a cubetti abbastanza grossi. Mettetele in una Terrina coperte di acqua e sale e lasciatele così per un'ora. Poi, tiratele su e spremetele, mettetele in un tegame con l'olio e friggetele 5'. Mettete in una padella pulita poco olio 1 spicchio d'aglio e unitevi le melanzane unendo lo zucchero e l'aceto. Fate scaldare il tutto mescolando con garbo.
